WEBJul 11, 2016 · That being said it is a great smoker for poultry because you an get it hotter. But it takes a bit of practice to get the 220-240 for long periods of time. WEBNov 16, 2020 · 3 Months ago I bought the Dyna Glo 42" Wide Body Smoker. I did a few quick mods right away. I bought gasket seal tape and added that to the front edges of the unit. I modified the firebox vents to no longer flop around by adding flat washers. I found that instead of filling the smoker box completely I just put down a 1" layer of chips.

WEBSep 25, 2019 · It's pretty hard to keep the temps down low before at least fixing the vents and door seals. Bare minimum mods should be fixing the vents and sealing the doors. Definitely a good starting point, but I wish the racks were a bit bigger. 13x14" is about the max on the cooking surface of each rack.

I get great smoke from chunks. I fill the dutch oven with water and wood chunks. Plus I use a digital thermometer to accurately set the temp to about 225-235.
